Matteo Bassetti, Director of Infectious Diseases at the Policlinico San Martino Hospital in Genoa, discusses the recent discovery of the avian influenza virus in a batch of raw milk in California. The virus, which can also affect humans, was identified as a potential health risk. The proximity of dairy cattle to humans in the food chain, through the consumption of milk and dairy products, represents a substantial risk factor for the transmission of pathogens to humans. In light of the recent situation in the United States, Bassetti cautions against consuming raw milk, particularly among children, given their comparatively weaker immune systems. It is therefore recommended that the milk be pasteurised before its release onto the market, thereby eliminating any bacteriological and viral risks by reducing the microbial load.
